If I add AccountingSuite Help and Support as a user in my account when I need assistance, will this count against my available user count?

No. The available concurrent user count for your plan is not affected at all if the AccountingSuite Help and Support user is added. The free Accountant account also does not affect your available concurrent user accounts.
